St.Regis Brasserie

The design of the new Brasserie at the street level of St.Regis hotel in Nisantasi refers to the typology of nineteenth century brasseries and mediates between this tradition, the historic building fabric and a contemporary architectural language.

The interiors are built using honed dark olive natural stone, brass and backlit onyx stone giving the building a distinctive presence within the context of the hotel. Large windows puncture the elevation in a regular grid pattern and frame views of the neighborhood from within.

The curved kitchen is clad entirely in dark olive natural stone with honed finish and brass detailing, giving it a strong physical presence within the space. Openings are cut into this stone mass as a display window that connects the kitchen visually to the interior. The bistro extends into the bar area, characterized by a material concept with a reduced palette of onyx, ebony wood and brass. Backlit onyx wall and the onyx strips in the grid ceiling provide a simple backdrop for the presentation of the dining experience. The grid– an element of nineteenth-century brasseries that can be found in the major European cities of London, Vienna and Paris runs from the ceiling to walls and to the custom mosaic floor.
